Happy Sunday everyone! I hope you all have had a great weekend <3! I whipped these breakfast muffins up the other night and wanted to share them with you. They are SO easy to make and you can make a variety of different ones. I just threw in what we had at the house, which was eggs, ham, cheese, and mushrooms. Tyler doesn’t like mushrooms so I made his without. For me, the most important ingredient in these is the creole seasoning. If you haven’t tried Tony’s, you are missing out!!! This seasoning is the BEST seasoning ever. It adds so much flavor to these little muffins. I usually use egg whites only to make them more healthy, along with turkey sausage and spinach. You can eat these on the go or heat one up and break it up on a tortilla and BAM, you have a tasty breakfast taco! Simple steps below. 🙂

STEP 1: Pre-heat oven to 300 degrees. Crack 12 eggs into large bowl and whisk.

STEP 2: Add 1 cup of cheese, 6 chopped mushrooms (12 if putting mushrooms in full batch), 2 cups of torn up ham, and 1 Tbl spoon of creole seasoning. Mix.

STEP 3: Spray muffin tin with cooking spray and fill each 3/4 with egg mixture. Sprinkle more creole seasoning on top.

STEP 4: Bake 25-35 mins. Let cool and enjoy 🙂
